I came across your blog which is very interesting and from which I gather that you enjoy good food. In one of your entries you mention that you have found it difficult finding restaurants open on a Monday so as a fellow Aude business person/networker I thought I would let you know that for the first time this winter we are opening our restaurant and that it is open on Mondays both winter and summer. Last winter we made a major investment in a new dining room and are pleased to say that the combination of designer elements (glass covered courtyard, turning staircase and zinc fronted mezzanine) along with some of the lovely old features such as the revealed stone walls has been well received. It is also nice and cozy with underfloor heating.
